Now, this is what we call “a healthy protein bomb”: This vegetable cake will blow your mind and it is fairly easy to create. Just take a ton of egg whites (or whole eggs, if you like the yolk, too), a bag of pre-cooked vegetables and throw it all into a baking mould (after chopping the vegetables into small pieces, of course).

That’s it. Easy, huh? We said it. And if you feel like having some meat, you can add it, too for the ultimate cake experience.

  • Preperation Time: 15 minutes

Recipe: Vegetable Cake with Egg Whites

Ingredients

  • 600 grams egg whites (or 10 eggs if you want to use the egg yolk, too)Recipe for Vegetable Cake with Egg Whites
  • 1000g grams of vegetable (take whichever you like, we’ve done it with broccoli!)
  • Spices and condiments as you wish (e.g. Salt, Pepper)
  • Optional: (grilled) meat, ham or cheese

Cooking Directions

  1. First we have to mix the egg whites with the spices in a big bowl.
  2. Take the (pre-cooked) vegetable of your liking (you can mix several vegetables) and chop it into smaller pieces. If you want to implement meat or ham, this is the best time to chop + add it in.
  3. Mix the chopped vegetables with the egg mix.
  4. Now take a baking mould and pour the egg-vegetable-mix into it.
  5. Cook the whole thing for about 30 to 40 minutes at 150 °C (302 °F) in the oven.
  6. Once the surface get solid, add some grated cheese if you want to.
  7. Enjoy your Vegetable Cake with Egg Whites!

The nutritional value of the Vegetable Cake will vary according to the vegetables you choose and if you add meat, ham or cheese to it. So, this nutritional values only apply to the “basic” cake without the bonus ingredients with broccoli.
