Our Low Carb Coconut Pancakes are an ideal treat for all those who are looking for a sweet meal that is low in carbohydrate but still protein-rich. The fat is mostly derived from the coconut ingredients, which are a healthy source for medium-chain triglycerides (MCTs) – a fast type fat that serves as a decent muscle fuel.

The combination of chocolate with coconut adds an unique flavor to this dish.

Recipe: Low Carb Coconut Pancake

Ingredients

For the pancakes

  • 1 whole egg
  • 4-5 egg whites (150 grams) or 3 more whole eggs
  • 20-30 grams protein powder in chocolate or vanilla
  • 1-2 Tsp. cocoa powder (fat-reduced)
  • 1-2 Tsp. coconut rasps / shredded coconut
  • Sweetner to your liking
  • (optional) grated / crushed hazelnuts, cinnamon etc.)

For the topping

  • 30-40 grams coconut rasps / shredded coconut
  • 1-2 Tsp. cocoa powder (fat-reduced)
  • Sweetner to your liking
  • (optional) 20 grams protein powder

Cooking Directions

  1. Let’s start with adding all the ingredients for the pancakes into a big bowl. Mix it with your hand mixer, until you get a decent batter.
  2. Heat up a pan and bake your pancake like you would bake your usual pancakes.
  3. For the topping you just have to mix everything in another bowl (or just take the same one). Slowly add some FlavDrops (optional), MySyrup (optional), sweetner and water, so that you get a spread-like topping, which you can use for your coconut pancakes.
  4. Put your pancakes onto a plate and sprinkle some of the spread onto them.
  5. Enjoy your LowCarb Coconut Pancakes.
