This recipe is fairly new to us, too. After trying it, we thought that this needs to get included into our recipe section. At first it might look a little bit complicated, but once you cook it for your first time, you’ll definitely love this pasta salad.

This is a perfect side dish for barbecues, meat and fowl – and it refreshes your energy reserves. 😉

  • Preparation Time: 5 minutes
  • Cooking/Baking Time: 15 minutes
  • Ready in: 20 minutes

Recipe: Mediterranean Pasta Salad

Ingredients

  • 100 grams tomatoe concentrateRecipe: Mediterranean Pasta Salad
  • 500g rams pasta (e.g. Penne Rigate)
  • 350 grams pickled, dried tomatoes
  • 70 grams olives, black without stone
  • 250 grams sheep‘s (milk) cheese
  • 3-4 cloves of garlic
  • 75 ml olive oil (take as much oil as you like, since this adds quite a lot of calories)Recipe: Mediterranean Pasta Salad

Cooking Directions

  1. Cook the pasta according to instructions (takes approx. 15 minutes).
  2. Cut tomatoes into small pieces, chop the olives in half and crumble the sheep’s cheese.
  3. Chop the garlic into fine pieces.
  4. Drain the pasta and add it into a bowl. Add the other ingredients, pour in some olive oil and mix it well. Use your favourite condiments (salt, pepper) for flavour enrichment.
  5. Enjoy your mediterranean pasta salad!
