A super easy low carb dish straight out of sunny Italy. If you’ve never had the chance to taste delicious Saltimbocca – here you have it!

Of course, if you follow a carb-rich approach you can substitute the Fake Mashed Potatoes with the real thing.

  • Preparation Time: 5 minutes
  • Cooking/Baking Time: 15 minutes
  • Ready in: 20 minutes

Recipe: Saltimbocca with Fake Mashed Potatoes

Ingredients (1 portion)

  • 400 grams celeriac
  • 200 grams veal (1 cutlet)
  • 1 slice parma ham (or bacon)
  • 3 Tsp butter
  • sage
  • salt & pepper
  • nutmeg
  • (optional) white wine / lemon juice

Cooking Directions

  1. Start with peeling & chopping the celeriac (you should gut it into 2x2x2 cm cubes).
  2. Add some water into the cooking pot and cook the celeriac for about 15 minutes on medium heat (so that the cubes get soft)
  3. Dab the veal cutlets and tenderize them (use the meat mallet). The more strength you put into this part, the more tender the meat gets. Just take care so that you don’t make it full of holes 😉
  4. Season your veal cutlets to your liking, heat up the pan. Wrap your veal cutlets into the ham and don’t forget to include the sage. Fix the whole thing with 1-2 toothpicks.
  5. Add 3 Tsp butter into the hot pan and roast your meat for 3 minutes on each side. (Hint: You can make a nice sauce out of the gravy).
  6. Drain the celeriac and put it into a big bowl. You can add another spoon of butter, before mashing it. Season the whole thing with nutmeg, salt and pepper according to your liking.
  7. Serve your Saltimbocca with Fake Mashed Potatoes on a plate – enjoy your meal!

Notes & Recommendations

  • Tip 1: Substitute the Fake Mashed Potatoes with the real thing to load up on anabolic energy. 😉
  • Tip 2: Make a delicious sauce out of the gravy. After roasting your meat, add some white wine and lemon juice. Now you can either take flour or butter (lowcarb) as a thickener. Now you only have to boil it down to a thick sauce.
  • Tip 2: Use some other type of meat instead of veal cutlets. Be creative and enjoy the rich taste of this awesome dish.
