This muffins are a welcome (savoury) variation of your typical recipe. They’re quite high in protein and a really healthy snack.

  • Preparation Time: 10 minutes
  • Cooking/Baking Time: 20-25 minutes
  • Ready in: 30-35 minutes

Recipe: Savoury Spinach Muffins with Tuna

Ingredients (10 muffins)

  • 250 grams quark or greek yohurt (low fat, high protein)
  • 250 grams cottage cheese
  • 150 grams tuna (1 can)
  • 400 grams spinach
  • 60 grams egg whites
  • pepper, garlic

Cooking Directions

  1. Start with thawing the spinach. You should drain it, so that its not that watery anymore.
  2. Drain the tuna as well.
  3. Now it is time to whisk the egg whites until they get stiff.
  4. Add all other ingredients in a big bowl and mix them well. Fold the stiff egg whites into the mix.
  5. Pour the “batter” into the muffin forms and bake them at 150 °C (302 °F) for 20-25 minutes.
  6. Let the muffins cool after baking – enjoy your savoury spinach muffins with tuna.

Notes & Recommendations

  • Tip 1: Those muffins are a perfect side dish for potatoes with salad.
  • Tip 2: If you don’t like your muffins with tuna, you can substitute that ingredient with something else (e.g. salmon, meat or ham).
