Most of us haven’t watched what they eat before starting to workout out and exercise and a lot of people enjoy their daily slices of bread (or bread rolls). There are a lot of different bread types around but most of them are full of carbs, which makes it difficult to limit the intake of insulin-spiking sugars.

Granted, today you can get protein-rich breads as well but most of the time they cost quite a lot. So, we thought about a neat solution and came up with his tasty low carb bread recipe for you. It got its fair share of protein, a little bit of fat and is low in carbohydrates.

A perfect bread for making low carb sandwiches!

  • Preparation Time: 5-10 minutes
  • Cooking/Baking Time: 60 minutes
  • Ready in: ~5 hours (needs to cool down)

Recipe: High Protein Flaxseed Bread

Ingredients (1 loaf)

  • 300 grams flaxseed meal, defattedRecipe: High Protein Flaxseed Bread
  • 6 eggs
  • 250 grams cottage cheese or quark
  • 1 packet baking soda
  • 10 grams herbs and or salt

Cooking Directions

  1. Pre-heat the oven to 180 °C (356 °F).
  2. Mix all ingredients in a big bowl with a hand blender or a food processor. Hint: the dough should be easy to knead. If necessary, add a splash of water.Recipe: High Protein Flaxseed Bread
  3. Add the dough to a loaf tin (you should probably use some butter to grease the tin.
  4. Bake the bread in the oven for about 60 minutes. You can check if the bread is ready, if you use a toothpick. Once you pull it out it should be totally dough-free.
  5. Take the bread out of the oven and let it cool for about 4 hours, before consuming.
  6. Enjoy your High Protein Flaxeed Bread!

Notes & Recommendations

  • Tip 1: You can substitute the flaxseed meal with another nutty meal, e.g. almond meal/flour.
  • Tip 2: This bread is really long lasting. Cut it into slices and freeze it, if you don’t want to use it up in the next few days.
  • Tip 3: The bread has a nutty flavour. You can add more nuts and seeds, to enrich it with tasty and healthy fats.
