You like cake? We do, too. And this one here is fairly simple to create. It has a fruity flavor (thanks to the berries) and – per slices – fairly low in carbohydrates, while also being protein rich.

  • Preparation Time: 10 minutes
  • Cooking/Baking Time: 10 minutes
  • Ready in: 3 hours

Recipe: Low Carb Blackberry Cake


Cooking Directions

  1. Pre-heat the oven to 180 °C (356 °F)
  2. First, you need to mix the eggs, the protein powder, coconut flakes, baking powder and water with a hand blender (or whisker) in a big bowl together.
  3. Pour the batter into a baking form (don’t forget to grease it with butter or coconut oil) and bake it for about 10 minutes (until the cake gets a golden-brown color). Let it cool down.
  4. Now its time to prepare the ricotta crème: Add the ricotta cheese into a bowl and add some sweetner, while you mix it until it gets creamy.
  5. Start adding the first layer of ricotta on the cake and place another layer of berries on top.
  6. Add the remaining ricotta cheese and sprinkle with almonds.
  7. Enjoy your Low Carb Blackberry Cake!

Notes & Recommendations

  • Tip 1: If you want to boost the protein content, you can substitute half of the ricotta cheese with cottages cheese or quark.
  • Tip 2: Place the cake for 1 hour into the freezer and you get a delicious ice cake.
  • Tip 3: You can replace the blackberries with other berry types (e.g. strawberries, raspberries etc.)
